Orange Glazed Loaf Cake

Ingredients:

1 Package Duncan Hines Orange Supreme Cake Mix

1 cup Water

2/3 cup Vegetable Oil

2 Eggs

Icing

1 cup powdered sugar

2 Tablespoons orange juice

1 Tablespoon melted butter

Directions:

Preheat oven to 350 degrees.  Spray 9 x 5-inch loaf pan with baking spray.  Cake will not fit in a smaller pan so if your loaf pan is not 9 x 5 inches, bake it in a Bunt pan instead.

Beat cake mix, water, oil, and eggs in large bowl with a handheld electric mixer on low speed 30 seconds.  Beat on medium speed for 4 minutes.

Pour into pan.  Tap pan on counter a few times to release air bubbles.  Bake in center of oven 45 to 50 minutes for loaf pan or 35 to 40 minutes for Bundt pan, until toothpick inserted in center comes out clean.  Do not open oven door while baking, it may cause the cake to sink in the center.  Cool on wire rack 20 minutes, remove from pan and cool completely.

Icing:  Whisk together powdered sugar, orange juice and butter in small bowl.  Pour over cooled cake.  Let stand 10 minutes, until glaze is hardened.  Slice and serve.

Note:  Make sure your loaf pan is 9×5-inches because this cake rises all the way to the top! Batter will fill pan to within one inch of the top so if your batter is higher up the pan than that, transfer to a Bundt pan.

I am not crazy about cake made from a cake mix but I buy the mixes occasionally when they are cheap because I know if you doctor them up a bit, they taste pretty good.  I happened to have one of those cheap mixes, an orange one, in the cabinet when I found out a couple of people were coming to our house for a little visit.  I didn’t have a lot of time so it was the perfect opportunity to make a quick dessert.  I went to the Duncan Hines web-site where I found several recipes using their orange cake mix.  The recipe for Orange Glazed Loaf Cake was very simple so I printed the recipe and headed to the kitchen.

I measured my loaf pan to make sure it was big enough to hold the batter, turned on the oven, and proceeded to prepare the cake batter.  In no time at all the batter was mixed and into the oven it went.  I set the timer for 45 minutes and tested the cake with a toothpick when the timer sounded.  It was done and I placed the pan on a cooling rack.

I prepared the glaze after the cake was completely cooled.  All three ingredients went into a medium size bowl and I used my handheld mixer to combine everything.  When the glaze was nice and smooth, I placed the loaf cake on a plate and drizzled the glaze over the top.  

A couple of hours later it was time to slice into the cake and see how it turned out.

Not too surprising the cake was pretty good.  The texture was very light and the glaze put it over the top.

Everyone had good things to say about this quick and easy cake, little did they know it came from a mix.  

This doctored up cake mix was a home run and I’ll be adding it to my self-made cook book.   Nailed It!
