Yes we can: Extension offers food preservation classes
The Clark County Extension Office’s food preservation workshop began Tuesday.
Participants in the three-day workshop are learning to can tomatoes, dry apple chips and freeze fresh greens. They are also gaining the skills to safely preserve homemade jam, salsa and a variety of fruits and vegetables.
The free workshop continues 9:30 a.m. to 3:30 p.m. Wednesday and Thursday.
Shonda Johnston, the Clark County Extension agent for family and consumer sciences, said workshop teachers Grace Angotti and Cheryl Case are retired extension agents.
“I get the privilege of them coming in and teaching the class and then kind of teaching me how to teach the class,” Johnston said.
While freezing, dehydrating, pressure canning and water bath canning, participants are using fresh, local produce. Johnston said the extension office also provides free lunch for participants. They are using SNAP recipes and can take the recipe cards home, she said.
